Financiers – Golden Little Treasures to Savor
Long before charming Parisian salons, financiers were known as visitandines, born in the 17th century in the region of Nancy and crafted by the sisters of the Order of the Visitation. Their recipe was simple and noble, celebrating almonds, butter, and egg whites — ingredients chosen with care to create a cake both tender and refined.
It wasn’t until the 19th century, in Paris, that the gold bar shape was adopted: easy to carry, quick to enjoy, it appealed to the financiers of the stock exchange district, giving the cake its modern name.
At La belle Plume, we’ve chosen to return to the original form: our financiers are baked in round molds, a gentle nod to the first visitandines. Golden, crisp at the edges, soft at the center, scented with browned butter and almond — a quiet little treasure, to be savored like a well-kept secret.

Ingredients: Almond powder, sugar, egg whites, butter, wheat flour, vanilla, salt.
Allergens: Almonds (nuts), milk (dairy), eggs, gluten (wheat).
Serving suggestions: Best enjoyed fresh on the day of baking. To revive their delicate texture, reheat briefly in a low oven (150 °C / 300 °F) for 3–4 minutes. Delicious on their own, with coffee, or as a refined companion to fruit and whipped cream.
